First boil a liter of water, add 500g of white sugar, another liter of water and 70ml of lemon juice. Bring everything to the boil and cook the pear slices for 2 minutes, then turn off the heat and leave them in for 15 minutes. Then you drain them, put them on a silpat, put them in a dryer at 60°C for 8 hours, turn them and leave them for another 6 hours.
